MENU- IN- MAKING
We are in the interim period. However we know the pattern
and those old favorites all of you look forward to upon returning:
the stable, the classic signature dishes that have created
and supported the establishment. Like the Sun-dried Tomato
Crusted Halibut with a Lobster Reduction Sauce. We literally
have to wait for the likes of the Atlantic fish to start
migrating up the coast and then deal with the spiratic occurances. We
are toying with Monkfish Medallions, Sauted Rainbow Swiss
Chard and a White Wine-Butter-Saffron Sauce. Tim Frairy’s
local arugula, peppery in taste, Grapefruit Segments and
Crumbled Goats Cheese with Citrus Vinagrette. The breaded
Veal Cutlet Milanese with Reduced Balsamic and Fresh Tomatoes
Roasted with Herbs and Garlic. Even the pasta take on a lighter
approach: Home Made Raviolis, Spinach and Riccota Cheese
with Roasted Pommi Tomato Sauce with a touch of Cream and
Roasted Galic. Oh and that standard Fettucini with lobster
and a Cognac Cream Sauce.
WINE AWAY, IF YOU PLEASE
Sally Campbell has already begun attending this season’s
wine tastings. Even though there are a few classic vintages
remaining in the cellar, she has been preparing herself for
the changes that will occur this season. There have been
a few wines in both the bianco and rosso categories that
have really come on like gang buster. The Branko, Tocai 2005
form Friuli has been a real favorite to many of our winter
steady customers. You will get a chance to taste this at
the Amici Dinner, along with it’s bigger sister, Branko,
Pinot Grigio 2006. With in red category, one of our recent
Spanish Celebrazione wines, the 2005 Nita, Priorat, has absolutely
surprised us with those returning and requesting the gem
from Spain. Check out the new Riesling by the glass, 2003
Josemeyer from Alsace. This is smooth but a dry Riesling.
Or, the Big Boy from the US of A, Napa, Philip Togni, Cabernet
Sauvignon. A great year 2002, and full as can be with lots
of dark fruit, soft tannins and a lingering finish.
OTHER DATES AND OCCURANCES
Besides the seasonal celebrations parties, we conduct business
as usual and gear up for another exciting summer season.
I will say though, it should be a very interesting 2008 on
the Cape; if I could only project the trail towards the November
Election. Be sure the October letter will have plenty to
say regarding the impacts.
